Grilled Chicken with Quinoa Salad

Ingredients:

For Grilled Chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tbsp paprika

  • 1 tsp garlic powder

  • Salt and pepper to taste

For Quinoa Salad:

  • 1 cup quinoa

  • 1 can chickpeas, drained and rinsed

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 cucumber, chopped

  • 1/4 cup chopped red onion

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1/4 cup olive oil

  • 2 tbsp lemon juice

  • Salt and pepper to taste


Instructions:

  1. Preheat your grill to medium-high heat.

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper. Brush the mixture onto both sides of the chicken breasts.

  3. Place the chicken breasts onto the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F.

  4. While the chicken is cooking, rinse the quinoa and place it into a medium saucepan with the water. Bring to a boil over medium-high heat, then reduce the heat to low and let simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.

  5. In a large bowl, combine the cooked quinoa, chickpeas, red bell pepper, red onion, parsley, mint, feta cheese, red wine vinegar, salt, and pepper. Mix well to combine.

  6. Once the chicken is done, remove it from the grill and let it rest for a few minutes before slicing it into strips.

  7. Serve the grilled chicken alongside the quinoa salad, and enjoy!
